I like to prepare different fillings for tortillas but they take so much time. While the onion is nicely cooked and then the rest of the veggies … So I prepared a recipe today that serves really well on days when you have only 5 mnutes. Let’s get cooking!


For 1 very hungry person on for 2 medium hungry; 5 minutes; Very simple


Ingredients

4 middle sized tortillas (I used corn ones)
250 g fresh champignons; cut lengthwise
4 tablespoons of salsa
4 leaves of salad
70 g grated cheese
Olive oil, spices

Instructions

  1. In a pan heat up a tablespoon of olive oil and add spices (I used coriander and cumin). Add champignons and roast them really quickly on a high heat. Around a minute and they are done.
  2. In a pan heat up the tortillas one by one.
  3. Spread a tablespoon of salsa on each and top with leaf of lettuce, champignons and grated cheese. Repeat on all, roll and devour.

Wise-ass corner

You can also add a minced clove of garlic to champignons.
