As I promised in a previous post called bomb-ass coffee I decided to create a vegan iced coffee today. Unfortunately I ran out of time to make a homemade ice-cream so I bought the vegan one for the first time (brand Valsoia). All the ingredients for this type of iced coffee cost much more – from coconut whipping cream (Soyat brand), ice cream and date syrup. And at the end you don’t really get the feeling you ate better that if you’d make a standard iced-coffee. The ingredients are still quite processed. So this recipe gets 5/10 points but it will be fun to improve it over the summer 🙂



For 2 iced coffees; Very simple; 20 min


Ingredients

3 dl of coffee; chilled
Ice
5 dl rice milk
200 g vegan ice-cream
150 ml whipping coconut cream; whipped
2 tablespoons of date syrup
Fistful of crushed roasted hazelnuts

Instructions
  1. Take two mason jars and pour in the equally the coffee, ice, and rice milk. Add the ice-cream, whipped coconut cream on top of it and pour date syrup on top. Decorate with hazelnuts.

I used chocolate and vanilla flavour.

I listed the ingredients in rough measurements. Add/lower some so you make a perfect iced-coffee to your liking.
