Sweet potato is one of my favourite vegetables. Tasty, a bit creamy and you can use it in 100 different ways. Today’s recipe can be used as a snack or side-dish.

For 1 or 2 people; Very easy; 20 minutes


1 sweet potato
1-2 tablespoons of olive oil
2 tablespoons of desiccated coconut
1 tablespoon of honey (maple syrup for vegan version)

  1. Cut the sweet potato to slices. Mix it with olive oil and roll in desiccated coconut.
  2. Bake for around 15 minutes on 200°C. After 15 minutes pour honey over it and broil for few minutes.
  3. Sprinkle with salt and serve immediately.

Wise-ass corner

Sprinkle chopped peanuts on top for extra crunch.

You can also dip your sweet potato into sour cream or cream cheese.
