I think that the moment I discovered the coconut cream changed my life. Why didn’t I know it earlier? Why is it so thick and creamy? So delicious! And then I prepared it with some sweet potato, leek and star anise. The result is a soup that warms your body, soul, taste buds and heart.

For 4 people; Very simple; 20 minutes


2 tablespoons of coconut oil
250 g leek; sliced
300 g sweet potato; cubed
2 star anise
1/2 teaspoon of cinnamon
1 pinch of nutmeg
1 teaspoon of turmeric
100 g of coconut cream
8 dl water

  1. In a pot heat the coconut oil and add leek, sweet potato and spices. Cook for about 5 minutes.
  2. Then add water and salt and cook covered for around 15 minutes or until the sweet potato is totally cooked.
  3. Blend with a hand blender and add salt or water if necessary.
  4. Serve.

My soup was decorated with some roasted onion. I think sesame would go really well with it too.
