I prepared this delcious super quick rice noodles dish this weekend and had it for three meals (not joking). I just can’t help myself when it comes to noodles and goat cheese 🙂


For 4-6 people; Very simple; 30 minutes


Ingredients

4 tablespoons of coconut oil
225 g wholegrain rice noodles
450 g carrots; grated
1 red onion; sliced
1/2 teaspoon of nutmeg
1 teaspoon of curry
1 teaspoon of garlic powder
Salt
1 can of tomatoes; cubed
100-150 g goat cheese
Cherry tomatoes

Instructions
  1. Soak the noodles in hot water and set aside
  2. Start preheating the oven on 180°C.
  3. In a pan heat the coconut oil and add onion and carrot. Stir well. Saute for about 3 minutes. Add the spices and tomatoes. Cook for extra 5-10 minutes until the carrot is soft.
  4. Drain the noodles and add them to the veggie mixture. Mix well and put in a baking tray.
  5. Top with goat cheese and cherry tomatoes and bake for about 10 minutes.
  6. Serve immediately.

Wise-ass corner

If you are a big fan of cheese add also some mozzarella.

If you don’t want to bake the noodles in an oven just stir-fry them for a few minutes in a pan with veggies.
