Soups like this one are really my favourite because you cook everything in one pot, blend and it’s done. And if it has such a good flavour as this one then… You want to eat it everyday 🙂 Miso is from a local company called Kis in kvas .


For 2-4 portions; Very easy; 30 minutes


Ingredients

2 tablespoons of coconut oil
400 g carrots; cleaned and sliced
2 onions; cleaned and minced
200 g red lentils
8 dl water
4+ tablespoons of peanut miso (to your liking)
Salt or soy sauce

Instructions
  1. In a bigger pot heat the coconut oil and add carrots and onion. Cook for around 3 minutes.
  2. Then add the red lentils and water and cover. Cook for around 20 minutes or until the carrot is cooked.
  3. Add miso and/or salt/soy sauce.
  4. Blend and serve.

Delicious healthy banana bread
