My mom gave me a little package of frozen  porcini mushrooms that her friend foraged. I decided to make a nice little brunch with them and try out this recipe – mushrooms with Swiss chard in mustard sauce.

Of course you can also use the fresh mushrooms – the time of cooking will be a bit shorter in that case. Anyway, enjoy this delicious snack. And don’t forget to read the wise-ass corner below.


Mushrooms with Swiss chard in mustard saue

Quick brunch idea - mushrooms with Swiss chard in mustard sauce that you can put on toast.


Ingredients

  • 2 tablespoons of oil
  • 200 g porcini mushrooms
  • 1 onion
  • 4 leafs of chard
  • 4 cloves of garlic
  • 1 tablespoon of mustard
  • Big bunch of parsley
  • Salt, pepper
  • 4 pieces of toast

Directions

  • Step 1 1. Slice the onion and chop the garlic and chard. Finely chop the parsley.
  • Step 2 2. Heat up the oil in a pan. Add mushrooms, onion and chard. Cook and mix for few minutes on high temperature. We want it to become slightly caramelized.
  • Step 3 3. Add garlic, mustard and parsley. Mix well and season with salt and pepper.
  • Step 4 4. Serve on toast*.

* If you want some next level toasts – toast them on a pan with some vegan butter.
