Sending you a new recipe from Mexico. This time it is chilaquiles - fried tortillas with salsa and toppings.

Chilaquiles are traditionally eaten for breakfast and since I love them I have tried them in the restaurants many times. You can see the photographies of how they were served on the bottom of the page.

If you checked my recipe for enchiladas you know that in Mexican cuisine they use salsa roja and salsa verde a lot. And chilaquiles are not an exception. In some versions they cook the chips in the salsa so it completely falls apart. I like my chilaquiles with the hot salsa just poured on top, so some crunchiness still remains.

When it comes to the toppings I got so many different things on them so far: onion, grated cheese, sour cream, avocado, beans puree, coriander, fried platanos, lime … That is the reason I wrote this recipe so loosely, so you can be inspired by the photos below and add whatever you like.

But just to make one thing clear - these are not nachos. Nachos come with generous serving of melted cheese.

Sometimes we joke with Klavdije because Mexican dishes mostly consist of the same ingredients that just come in different variations. And when you change one ingredient the dish gets a completely new name.

ingredients

4 handfuls 4 handfuls
tortilla chips
2 cups 0,5 dl
tomato salsa (seasoned)
4 4
eggs
Toppings: grated cheese, sour cream, onion, avocado, tomato, spicy salsas …

instructions

  • 1. 

    Distribute the tortilla chips on two plates.

  • 2. 

    In one pan start heating the tomato salsa and season it. In a pan fry 4 eggs on a bit of oil - sunny side up.

  • 3. 

    Cut/grate all the topping you want to use. Pour the hot salsa over tortilla chips, add the toppings and serve immediately. Buen provecho!
