Hungry, I need to prepare something fast. But what? I have some leftover rice form yesterday. A can of tomatoes, cauliflower,…
And by accident this was created. A bowl of taste that fit perfectly together. On the bottom brown basmati rice infused with star anis, over it thick tomato sauce with curry and garlic and on top in the oven roasted cauliflower with coconut.


For 2-3 people ; Very easy; Time of  preparation 30 min


Ingredients

500 g cauliflower

4 big tablespoons of coconut

4 tablespoons of olive oil

2 pinches of salt

200 g rice (I used brown basmati rice.)

Water

Salt

1 tablespoon of olive oil

400 g canned tomatoes (one can)

Pinch of rosemary

2 teaspoons of curry

Salt

1 tablespoon of honey or sugar

3 cloves of garlic

Instructions
  1. Cut cauliflower into bite-size pieces. Put it on a oven tray and mix well with coconut, olive oil and salt. Bake on 200°C for 20-25 minutes.
  2. Cook rice by the instructions on the box.
  3. Put olive oil in the pan and start heating it. Saute curry on it for few seconds then add canned tomatoes and squish them with a fork. Add rosemary and heat until it starts to bubble. Add honey or sugar, garlic and salt and mix well. Pout over rice and add cauliflower on top of it.
